200ml recently pressed lemon juice
500g caster sugar

To make the Cocktail (produces 850ml, to serve 10)

To prepare the Citrus Syrup: Put every ingredients inside a saucepan, heat until it reaches a simmer, stirring until the sugar dissolves. Next, take off the burner allowing it to reach room temperature entirely. Pour to a sealable bottle, cap it keeping it in the fridge, where it will keep for about four weeks.

Preparing the Batch Mix: Mix the specified liquids in a big jug, leave to sit for one hour, then filter it preferably using muslin, so it's perfectly clear.

When ready to serve: Pour 85ml of your premix into your mixing glass filled with ice, gently stirring lightly for a minute to cool it down. Pour into a frosted cocktail glass or similar, top with a few cranberries adding the final touch using a brief mist of the essential oil over the drink.
